For an easy-to-make, raw, vegan, + gluten-free treat, whip up this super yummy and energizing chocolate chia seed pudding!
This heavenly pudding is chockfull of protein and healthy fats from the chia seeds, avocado, and coconut oil, and receives its delicious chocolatey flavor from the chocolate protein powder. Also, its super quick and easy to make. It took me 5 minutes with my nutribullet! I topped mine with fresh blueberries, coconut flakes, and cacao nibs, but you could add anything you wish!
1/3 cup chia seeds
1 cup unsweetened vanilla almond milk or coconut milk
2 tablespoons chocolate protein powder
1 tablespoon coconut oil
2 pitted dates
1 tablespoon Manuka Honey
1/2 teaspoon vanilla extract or fresh vanilla
Combine all ingredients in the food processor or high speed blender. Let sit for 30 minutes in fridge or overnight until the pudding has thickened. Stir and enjoy!
